Cauliflower "Risotto"

Risotto has always been one of my favorite comforting dishes. But did you know you can make something just as cozy, with far fewer carbs, in under 15 minutes? With only three main ingredients, this “risotto” is creamy, flavorful, and requires almost no effort!

If you’re new to nutritional yeast, it has a naturally cheesy, savory flavor and is an excellent source of B vitamins and protein.

Ingredients

2 bags frozen cauliflower rice (10 oz each)

2 Tbsp butter (or light olive oil if dairy-free)

½ cup nutritional yeast

1 tsp salt

¼ tsp black pepper

Instructions

Place the frozen cauliflower rice in a pot and cook, covered, over medium-low heat until softened and easy to break apart with a spoon.

Stir in the butter, nutritional yeast, salt, and black pepper.

Cover again and simmer on low heat for 5–10 minutes, until the texture reaches your desired creaminess.

Serving Suggestion

This comforting side dish pairs beautifully with salmon, roasted chicken, or your favorite protein.
