How many of you like Brussels sprouts?  They are  superfood in the cruciferous vegetable family, and a rich source of anti-cancer compounds.  They have sulforaphane, which helps your body make more of the master antioxidant, glutathione!  They also have I3C and DIM which helps your body metabolize estrogens properly.  Brussels sprouts are an excellent source of fiber to feed all the good bacteria in your gut microbiome.  

For those who are sensitive and find it hard to digest Brussels sprouts, try taking Digestive Enzyme Pro before the meal to help reduce symptoms of gas or bloating.

The key is figuring out how to make this cruciferous superfood taste amazing!  Getting that perfect balance between savory, sweet, tart, and bitter is key!  Believe it or not, this recipe is kid-approved!  My son gobbled up his serving! :)  

Preheat oven to 425 F

About 30 Brussels sprouts

2 tablespoons maple syrup

3 tablespoons light olive oil

1 tablespoon Balsamic vinegar 

1/2 teaspoon salt

1/4 teaspoon pepper

2 large cloves of garlic, through a garlic press or minced

Wash and cut the Brussels sprouts in 1/2 and put in a glass baking dish.

In a bowl, mix the other ingredients.

Pour over the Brussels sprouts and toss to mix well.

Cover the dish with aluminum foil and bake for 18 min covered, then remove the aluminum foil and bake an additional 5-10 min until caramelized and some turn golden brown.
