This is a great make-ahead breakfast! Chia seeds are a great source of soluble fiber andĀ omega 3 fatty acids!

1/2 Cup Chia Seeds
2 Cups Non-Dairy Milk (like unsweetened Almond Milk)
1 tsp Vanilla Extract
1 tablespoon Maple Syrup (or sweeten to taste with Stevia)
Pinch of salt

Mix the ingredients together in a bowl and pour intoĀ 4 small glasses or mason jars.

Cover and keep in the fridge overnight.

Top with fresh berries, coconut flakes, and chopped walnuts for aĀ fresh and healthy breakfast!
