My Latest Favorite Breakfast!
This has been one of my favorite breakfasts lately! It's super colorful and full of good fiber from veggies to keep you full all morning.
This is microbiome-boosting and metabolism-boosting food!
To make this Breakfast for 2:
Saute 1/4 chopped onion and optional 1 clove of garlic with olive oil until fragrant
Add the defrosted veggies and saute for a few minutes.
Add your favorite spices: I like 1/8 tsp cumin, 1/8 tsp curry powder, 1/8 tsp chili powder, and a dash of cinnamon.
Finally, add in 4 eggs and mix together on low heat until scrambled.
Season with 1/2 tsp salt and 1/4 tsp pepper.
Serve with your favorite colorful fruit, like blueberries!
